Jícama Fig Smoothie
Figs are a wonderful summer treat and perfect for smoothie-making. They blend well and can be frozen for several weeks after the (quick) season. Paired up with cherries, this smoothie is as beautiful to look at as it is to eat!
ingredients
½ frozen, chopped banana
5 large figs, stems removed
About ¾ cup frozen cherries (any kind)
½ cup jícama, chopped
½ cup shredded coconut
Coconut milk
Toppings –
More fresh figs, bing cherries, goji berries, and Spiced Seeds (link)
instructions
Blend all of the ingredients in a high-power blender for about 1 minute
Check consistency and blend more as needed (adjust the amount of liquid to desired consistency)
Serve in a bowl, or cup and add desired toppings
