Banana Walnut Pancakes
These pancakes are a family favorite. The recipe is based off of my elementary school music teacher’s recipe and I have yet to find a better one. Swap any add-ins you like, or stick to the original. It’s nostalgic food at its finest!
ingredients
1 cup flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
1 tbsp raw (turbinado) sugar
1 egg
2 cups buttermilk
1 tbsp olive oil
1 ripe banana, smashed
1/2 cup chopped walnuts
instructions
Combine all ingredients except walnuts in a large bowl.
Cook on hot griddle (I use butter) and add walnuts when bubbles begin to form on batter surface.
Flip after a couple minutes, or once first side is golden.
Cook another couple minutes.
Serve immediately with your fav toppings.
