Blackberry + Goji Smoothie Bowl
Looks fancy, but really, if you can use the blender, you can make a smoothie bowl. In my experience, smoothie bowls make for cooling, refreshing, and energizing summer breakfasts and snacks. Plus, they’re versatile, so if you don’t have the exact ingredients, you can swap out similar options in your kitchen. Enjoy!
ingredients
for the smoothie base -
1 cup frozen blackberries
1/2 cup frozen raspberries
1 frozen banana, chopped into chunks
1 tbsp goji berries
1 tbsp coconut oil
1 1/2 cups coconut milk (add more per your consistency preference)
toppings* -
1 tbsp chopped walnuts
2 tsp shredded coconut
1 tsp chia seeds
Fresh raspberries (to taste)
Goji berries (to taste)
Makes 1 serving
*All toppings are optional. Feel free to make modifications and additions as you like.
instructions
Place all smoothie ingredients in a high power blender. Blend on high for 1 minute. Stir ingredients and scrape sides of blender. Blend an additional 1 minute.
Pour smoothie contents into a large, shallow bowl. Top with suggest toppings in whatever design speaks to you. Serve immediately.
