Egg Roll Stir Fry
Imagine deconstructing an egg roll and having a whole bowl filled with the delicious stuffing…sound yummy? It is! This dish is fast, satisfying, and can be made with any veggies you have on-hand. I eat mine along with sticky white rice, or make an entire Rainbow Bowl.
ingredients
2 tbsp oil
4 stalks green onion, chopped
2 cloves garlic, finely chopped
juice of 1/2 a lime
1/3 cup soy sauce
1 tbsp rice vinegar
1 lb ground pork (or ground turkey)
1 tsp ground black pepper
1 cup shredded carrots
2 cups shredded cabbage
instructions
Heat oil in a large skillet over medium heat
Add onions and simmer 5 minutes
Meanwhile, whisk together: garlic, lime juice, soy sauce, and rice vinegar, and add mixture to the skillet
Add ground pork and break up meat into small pieces, evenly coating in sauce
Add black pepper, cabbage, and carrots, combine well
Cook, stirring occasionally for 10-15 minutes (or until cabbage and carrots are desired softness)
Serve immediately with white rice, or build a Rainbow Bowl!
