Pineapple Mint Smoothie
This is my absolute favorite smoothie. I rarely choose favorites among my dishes, because variety is the most appealing aspect of cooking to me, however, I’ve perfected this smoothie over years of smoothie making and I LOVE it. It’s the one I come back to again and again. It’s refreshing, nourishing, and best of all, energizing.
INGREDIENTS
½ frozen banana
½ cup frozen pineapple
Juice of ½ an orange
½ inch knob of ginger, peeled and roughly chopped
1 mint sprig, stem removed
2 large handfuls of spinach (1+ cup)
1 tbsp coconut oil
Coconut water
INSTRUCTIONS
Blend all of the ingredients in a high-power blender for about 1 minute
Check consistency and blend more as needed (adjust the amount of liquid to desired consistency)
Serve in a bowl, or cup and add
desired toppings
